Gin Cocktails

Crafted with intention and restraint, this gin is premium not because it demands attention, but because it rewards it. Designed to be enjoyed neat, it offers clarity of juniper, a confident spine of spice, and a dry, composed structure that unfolds slowly on the palate. It is a gin that invites contemplation—best appreciated when nothing distracts from its balance, texture, and aromatic precision.

Yet quality reveals itself not only in purity, but in versatility. While this gin stands comfortably on its own, it also welcomes thoughtful exploration. It moves effortlessly into spirit-forward cocktails, retaining its character rather than dissolving into the background, and shows equal harmony when lengthened with a light Mediterranean or Indian-style tonic that lifts its botanicals without softening its spine. The key lies in restraint: minimal sweetness, measured dilution, and ingredients selected to complement rather than compete.

The cocktails presented here are built on that philosophy. They are not designed to transform the gin, but to frame it, using classic formats and subtle adjustments to highlight what is already there. Whether enjoyed neat or mixed, this is an invitation to sip with intention—exploring a gin shaped by character and careful craft, revealing new expressions while remaining true to its considered soul.

Ultra-Dry Martini

Our Batch 006 loves a Martini that is crisp rather than perfumed. We recommend keeping the vermouth light to avoid softening the gin’s spine, ensuring greater clarity and a beautiful lift to the spice.

Adjusted Build
• 60 ml Batch 006 London Dry Gin
• 5-7 ml Dry Vermouth
• 1 dash orange bitters

Method: Stir cold & strain into chilled coupe
Garnish: Lemon twist expressed then discarded; so you get aroma without extra citrus oil coating the palate
Result: Juniper authority • clean pepper warmth • elegant dryness

Aperitivo Pairings

Perfect partners are salty, nutty, and crisp, not creamy or sweet:

  1. Castelvetrano / Sicilian Green Olives
From sunlit groves in Sicily, these luminous green olives bring a buttery softness and gentle brininess that beautifully flatters the gin’s clean spice.

  2. Parmigiano Reggiano
Born in the heartlands of Emilia-Romagna, this majestic aged cheese delivers nutty richness and crystalline savoriness that amplifies the Martini’s elegance.

  3. Fennel Salami / Finocchiona
From the rolling hills of Tuscany, this delicately perfumed fennel salami offers silky texture and aromatic sweetness that lifts the gin’s juniper backbone.

These tasty aperitivo options mirror our botanicals and texture rather than compete.

Gibson

Our Batch 006 Gin reacts wonderfully with savory umami. The pickled onion adds contrast without sweetness and actually highlights the gin’s structure.

Adjusted Build
• 60 ml Batch 006 London Dry Gin
• 10 ml Dry Vermouth

Method: stir • strain • serve “up”

Garnish: 1–2 small crisp cocktail onions
(Avoid overly sweet onions—sharp and delicate is ideal)

Result: Dry • savory perfume • pepper and coriander lift

Aperitivo Pairings

We recommend echoing savory tones with restrained richness and gentle salinity.

  1. Prosciutto with Grissini
Melt-in-the-mouth prosciutto from Parma or San Daniele wrapped around crisp Piedmontese grissini creates a luxurious contrast that deepens the Gibson’s savory charm.

  2. Giardiniera
This Piemonte secret has found its way into the aperitivo bars of Lombardy and Veneto, its newfound popularity driven by the gentle spice and garden freshness of lightly pickled vegetables that awaken the palate between sips.

  3. Salted Almonds / Aperitivo Nuts
Echoing the relaxed aperitivo culture of northern Italy, these gently toasted, lightly salted nuts add warm crunch and subtle richness to the drink’s dry, spicy character.

This keeps the palate awake and perfectly matches our Gin’s Gibson mood.

Gin Old Fashioned

Our Batch 006 gin’s spice profile behaves beautifully in a spirit-forward Old Fashioned format. We recommend keeping sweetness restrained so spice leads, not sugar, allowing you to truly treasure this spirit-sipping sophistication.
Adjusted Build
• 60 ml Batch 006 London Dry Gin
• 1 barspoon 2:1 simple syrup
(or very light honey syrup if you want warmth)
• 1 dash Angostura aromatic bitters
• 1 dash orange bitters
Method: Stir • serve on large clear cube
Garnish: Express orange peel over glass and discard or keep minimal
Result: Structured juniper • warming spice glow • long botanical finish

Aperitivo Pairings

We recommend pairing this timeless classic with slightly richer but still elegant bites:

  1. Aged Pecorino
From the pastoral landscapes of Tuscany and Sardinia, this firm sheep’s cheese brings deep savory warmth that wraps beautifully around the cocktail’s botanical spice.

  2. Asiago
Shaped by the alpine air of Veneto and Trentino-Alto Adige, Asiago offers smooth nuttiness and refined sweetness that harmonize seamlessly with the gin’s structure.

  3. Speck
Born in the mountain traditions of South Tyrol, this lightly smoked, delicately spiced cured ham mirrors the cocktail’s warming depth with effortless sophistication.

  4. Bresaola
From the high valleys of Lombardy’s Valtellina, this lean, air-dried beef brings elegant aroma and restrained richness that supports the gin without overshadowing it.

  5. Rosemary Focaccia
From the fragrant coastline of Liguria, this soft, olive-oil-kissed focaccia offers gentle herbal warmth that complements every contemplative sip.

These Italian delicacies cushion the dryness without muting it.
